Cooking: Tortilla (Mathilde)

A little history:

If you ask a Spaniard what is his favorite, almost certainly tapped, he will answer the tortilla de patatas, or omelette with potatoes. Want to know why? Because it is one of the most popular Spanish dishes. The recipe is very simple - eggs, potatoes, salt and olive oil - its round shape and create a delicious juicy texture that you find in any food establishment.

Prep Time: 15min
Cook Time: 30min

Ingredients (for 6 persons):
- 1 kg of potatoes
- 8 eggs
- A large onion (for a large stove)
- Salt and pepper
  
Preparation of the recipe:

©      Peel and cut the potatoes into slices
©      Peel the onion and cut into small pieces.
©      Put all these ingredients in the pan
©      Cover with olive oil (we need all the potatoes bathed in oil). Cover the pan with a cover
©      Once the potatoes cooked, pour the olive oil into a container.
©      Pour the potatoes and onion in a bowl. Add the beaten eggs, salt and pepper. There must be enough eggs for tortilla is well connected.
©      mix gently
©      Put the pan in 2-3 min of olive oil and pour in the mixture. Cook over low heat one side of the tortilla.
©      Once the bottom is golden, flip the tortilla on a plate. This is difficult because the eggs on top are not cooked and the oil in the bottom is very hot.
©      Put a little oil in the pan if necessary, and to drag the tortilla to brown the other side.
©      Once browned on both sides, slide the tortilla on a plate.
